Princess & Me: Pumpkin Pancakes

Today, Belle put together a surprise breakfast for her and the Beast to share! What could she and Lumiere have made for breakfast? Her favorite autumn recipe of course! Pumpkin pancakes are a favorite in the castle.

Follow Belle’s instructions to make your own pumpkin pancakes – with the help of an adult, of course!

Step one: collect your ingredients.

  • 1 ½ cups milk
  • 1 cup pumpkin puree
  • 1 egg
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar
  • 2 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon salt

Step two: mix together the milk, pumpkin, egg, oil, and vinegar in a large bowl.

Step three: combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger, and salt into a different bowl.

Step four: Stir the dry mixture into the pumpkin mixture.

Step five: have a responsible adult heat a griddle or frying pan over medium high heat. Lightly spray with PAM.

Step six: pour the batter onto the griddle, about a ¼ cup for each pancake.

Step seven: flip pancake.

Step eight: remove pancake from griddle. Repeat. Enjoy!

If you wish, you can eat your breakfast the way Belle and the Beast enjoy their meals. Belle sets the table with placemats, silverware, and a healthy glass of milk. She also recommends you top your pancakes with some maple syrup. Another excellent autumn goodie!
